I Made ice cream sandwiches with the Grandkids last night........
#1) First we made cake mix cookies:

1 box cake mix, any flavor
1/2 cup oil
2 eggs
Blend well. Scoop (or use teaspoons) onto parchment covered cookie sheet. Bake at 350 for 10 minutes. Let cool completely.
#2) choose a co-ordinating ice cream and let it get a little bit soft:
#3) Scoop ice cream onto cookies and spread to cover:
#4) Top with a second cookie, place in a zip lock baggie, and freeze til firm.
#5) EAT!
When you're 5, what's better than eating an ice cream sandwich that's as big as your head?!!

There was much conversation about different cake and ice cream combinations for next time.....
apparently I'll be going to the store today for lemon cake mix and rainbow sherbet!

Hey, I did not know that you had Tillamook Ice cream in So CA. I thought it was only Northwest. Anyway, I saw the Cake Batter flavor the other day and couldn't decide if it would be good or not. Was it?!
